Wow, 3 days isn't much time. You can drive or take a hostel shuttle up to Kaikoura, and then book a whale watching trip with Kaikoura Whale Watch -- that will take up pretty much most of a day if you're doing it from Christchurch. You could probably continue on to Picton after Kaikoura, too. ...
