If you want to learn Spanish, you should go to Salamanca. It's the Perugia of Spain ...
Tuscany hill towns from Sienna and Florence
Places like San Gimigniano can easily be reached by bus. Assisi is considerably further afield. I would suggest doing that from Perugia which is much closer by (not to mention cheaper in terms of lodging), same for Cortona (very nice), Arezzo, Città di Castello, San Sepolcro... Come to think of it ...
