I've visited Sevilla three times now, always in winter, and enjoyed every time. Try to stay somewhere in the Santa Cruz district; lovely narrow alleys to purposefully get lost in and wander about sniffing up atmosphere. The Alcazar is easily worth a day of your time. I also quite like the over-the-top architecture of the Plaza de Espana.

Depending on how long you're going, all of Andalucia is filled with worthwhile sights and towns. The Alhambra in Granada is of course legendary (I found the rest of the city not that impressive, though still worth exploring for a day). Ronda in the off season is also quite wonderful; very nice to descend the cliffs and just go out hiking in the countryside (plus there's a cave nearby with cave paintings, which I had never seen in real life before, so found quite impressive). And that's not even mentioning Cordoba, Cadiz, Malaga, Tarifa, the wonderful hiking in the Sierra de Grazalema, and so on...

Southern Spain means essentially you're going to Andaluzia/Andalucia.

Seville is one of many beautiful cities down there. Cadiz, Jerez, Cordoba are very close.
Cordoba can be done in a daytrip from Sevilla.

I'd venture down to Malaga, go to Cordoba as well.

And then, why not Gibraltar?

I have near forty years of experience of visiting Andalucia at least two weeks and up to seven weeks per year almost every year. Ask what you like of me as a specific, but all you probably need is a guide book or an online guide.

If you only mean Seville for example - http://www.exploreseville.com/index.htm
