We plan to spend 7 days in Morocco. I'm not sure if the trip is too hectic.

Your trip can't be hectic at all, it depends where you would like to start, if you fly into Marrakech spend 4 nights visit saadien tombs,Palais Bahia,Medersa Ben Youssef and the museum, finishing your tour with the souls and Jamaa Lafna Square.
Next day visit Majorelle gardens in a caleche (horse drawn carriage) and the new town Gueliz. The day after day trip to Essaouira the artists city with its old fishing port.
Then you can go on a 1 night and 2 days trip to Merzouga with a stay in bivouac tent and camel riding, watching sunrise on top of a sand dune.
Back to Kech for your last night to rest and departure. Let me know if you're interested in this itinerary.
