I'm trying to look into some form of volunteer work around Europe this summer around late August. Had a brief google and checked the links on this site but not come across what I'm looking for. Can anyone recommend any sites to look at? I'd like to do outdoor say in national parks, does anyone know about any such schemes? any help or suggestions please.

Here are a couple of suggestions. The following information was found on website with all kinds of random things to do abroad, especially in Europe!

Listed Under France:
Region: Bordeaux (South West France)

Description: Several students are required to help on a voluntary basis with the ongoing renovation of an 18th century cognac distillery in south west France.
In exchange for 5 working days per week you will be rewarded with a generous package comprising; excellent accommodation, great food, mountain bikes, extensive book and video library, local wine and beer 7 days per week, plus occasional internet use and taxi rides to nearby towns and leisure parks.

The project offers direct contact with local French people and builders and may therefore appeal to language students or architecture students. Nearest cities are Bordeaux, Angoulememe and Cognac with good transport connexions to the Atlantic coast, Spain and other regions of France.

Ideally you will be a UK or EU citizen, or if not, you will have acquired your own work permit/VISA. You will be hard working, willing to follow instructions and enjoy mixing in a young group environment.
Project begins March and closes end of summer 2005.
Expression of interest in the first instance to:

Also there is a website called also has many great things to do over the summer. The last, but alot of the programs on here have to pay. I had contacted the program myself, but I will be unable to go...seems like an interesting experience..but check it out and see what you think..
Good Luck with your search!
