I recently saw some interesting stuff to do in Pattaya from some travel series that I follow.
The show talks about going to the same places but doing different things.
They visited a vineyard and the Cartoon Network waterpark!
Anyone been to this spots in Pattaya?

Pattaya is a beach city about 2 hours from Bangkok using a cheap bus. Pattaya City area is the main tourist destination. Jomtien Beach is close by. This city area is known for nightlife which you can investigate or ignore. However, besides nightlife you will find hotels cheaper than Bangkok. Local transportation at 10 baht using baht buses. Modern malls, good restaurants even cheap dentists too. Couples, family groups and even honeymooners visit Pattaya for a cheaper holiday.
Map below. Pattaya Second Road (Sai Song) and Pattaya Beach Road (including nearby side streets) are the main tourist sections. There is a vineyard off Sukhumvit Road, the Silverlake Winery.

There is a waterpark at Jomtien Beach. Any quick Google search will give you some of the other things you can do in Pattaya City - Jomtien area.
Pattaya Beach is okay for restaurants, malls, street vendors, nightlife and sunbathing/walking/jogging. But many tourists do not swim at Pattaya Beach. Water quality is not good enough. Some cleaner water activity located at Koh Larn Island which can be reached by cheap ferry boat ride for 30 baht. Jomtien Beach has slightly better water quality than Pattaya Beach. Jomtien Beach is also popular with gay tourists too.
Pattaya Beach is a cheap seaside destination including probably cheapest local transportation at any beach in Thailand. (Cost 10 baht using baht buses.) Cheaper hotels than Bangkok and Phuket. (Also cheaper nightlife than Bangkok and Phuket too!) Easy to get to by bus from Bangkok.
I have been by the waterpark and near the winery but never stopped in.
Up to you!

Thank you for sharing all this information, this is great help. What you described is what I've seen on the show. It's interesting. Been to Bangkok quite a number of times but not Pattaya. Saw Koh Larn Island in the show, it looks nice! Not into nightlife with a kid in tow, but definitely will look up the rest of the stuff you've mentioned.
The Cartoon Network Water Park really looks like a lot of fun, never knew it existed!
