Hi Ronan!

I guess it's really going to depend on your budget first of all... But, with that said, my husband and I really enjoyed the Paris Hotel and Casino. Though we were staying next door at Bali's - business trip so we did not book the accomodations - we spent most of our time in Paris. The main floor is decorated as a Parisian cobblestone street, with a great restaurant that has a "outdoor" patio. We ate there for several meals, which were excellent. Everyone speaks both French and English (no matter their true nationality). The ceilings are painted to resemble the sky and a small plane flies around the perimeter at the top. Even knowing we were inside, you had the atmosphere of being outdoors. We did a tour of most of the hotel/casinos in the vicinity and still liked Paris - though, if you have tons of money to spend, the Bellagio is the pinnacle.

If you like thrills - there is the Stratosphere Las Vegas Hotel and Casino, which sports "thrill rides" - the Big Shot, High Roller coaster, X-Scream and Insanity (which is their newest ride). Check it out - it may be for you...

The MGM worked out very well for me last time, but I think that might have had to do with the fact that we got a free upgrade to penthouse suite!!! :)

The Rio or the Palms are the two where all the "hip" people go - you are probably most likely to run into a celebrity there.

The Hard Rock Casino has the nicest pool in Las Vegas - including a swim up bar and swim up casino tables. It's the place you are most likely to run into a porn star.

Binion's Horseshoe has gotten some press recently due to the fact that the WSOP was started there. It's downtown, but downtown has it's own charms - it's a lot more walkable and socialable in my mind.

Personally, I liked New York, New York because of the ESPN Zone located right by the sports book, the Irish pub and Coyote Ugly.

Not a big Vegas fan myself, but that being said... I like the Treasure Island Hotel. (I think that's the name) I have family in Vegas so I don't stay in Hotels much... Anyways they actually sail two full sized ships in front of the hotel every other day or so and have a band of pirates attack another ship... It's really a neat show to see.

The New York New York has a roller coaster glued to the front of it that is sort of fun, and the MGM Grande is a nice family place close to the M&M factory which is interesting to tour through after you've given all your money away to the casinos... If memory serves me the tour is even free.
