Texas is something I've wanted to do my whole life - Cowboy country is appealing to me. Now that I'm actually going I'm unsure on what exactly it is I want to do there.
I'm willing to give everything a go so please let me know any recommendations!

Go to Fort Worth. They have a cattle drive and the cowboy Hall of Fame.
It's been a long time since I last visited Texas, but I do specifically remember enjoying San Antonio. I'd recommend looking into that. Find a rodeo to attend as well - they're fun
Thanks both - added to our list of possibles
The River Walk in San Antonio is fun and you must visit the Alamo. Between San Antonio and El Paso is Langtry and the Judge Roy Bean Visitor Center. If you are interested in "the Old West," this is a great place to visit. Here is a web site with the story and information. http://texaspecostrail.com/plan-your-adventure/historic-sites-and-cities/sites/judge-roy-bean-visitor-center
