We have New Zealand accommodation listed on Travellerspoint which should get you started. Zoom into the map for more options in areas you might be interested in.

Generally speaking the "best destinations" are not the "less explored" ones. I'll leave it to others to make recommendations. Since it sounds like you're pretty early on in your research though, have a look at our New Zealand guide for initial info.

From the north downwards in the North Island, Cape Reinga, Russell, the Bay of Islands and Waitangi, Tutukaka and Poor Knights Island (for scuba diving), Auckland, the Coromandel, Tauranga and Mt Manganui, Hobbiton near Matamata, Rotorua, Waitomo Caves, Taupo, Napier, National Park for the Tongoriro Crossing, New Plymouth for Mt Taranaki, Wellington.

I'm not quite so familiar with the South Island but Abel Tasman National Park near Nelson, Kaikoura for whale watching, Christchurch and Akaroa, Dunedin, Queenstown, Fjordland, MIlford Sound, Franz Josef Glacier, Fox Glacier and Mt Cook. All these will be suggested in the guide suggested by Peter earlier.

Accommodation, transport and meals aren't cheap in New Zealand; make sure you have sufficient funds available.

Enjoy your planning! :):)
