My friend and I are looking to go on a trip for a couple of weeks during Christmas break, from early to mid january. I'm wondering where a good place to go would be, given the colder temperatures.

Depends how far you want to go, but at that time, most of SE Asia is great (all but Indonesia). Central America is good then. And, of course, if you go South of the equator it's Summer down there. India is also ideal then. Lots of choices. :)

I was thinking of India. We're kind of restrained by the time, unfortunately, and my first thoughts are that the cost of the plane tickets to India doesn't make one or two weeks worth it.

I also thought about southern Spaine, and Morocco rolled into one, but as for countries further south...I really am not sure where to go, or what to do. Most of my expertise is further north,

Mexico is very nice in winter;) and very inexpensive too boot!
