When you should book depends mostly on what kind of accomodation you're looking for (in hostels: what kind of room), and how picky you are about the hostel.
I think YHAs are booked full as much as three or four weeks in advance, and I figure if you want double or twin rooms, you might want to book as much as two months or longer before New Year's. Don't know if Bondi is worse or better than the city center, but if I had to bet, I'd say it's worse. Given that you can _cancel_ up to 48 hours before arriving, I'd definitely recommend booking as early as possible. (Within limits - but say ~4 months in advance if you really want to be certain.)

Prices (at least in hostels) aren't any different than at any other time of the year.

Sander, I have experienced that prices in hostels over Christmas/New Years in Sydney and Byron Bay were at least 10 $ more than at any other time of the year:(. I also recommend booking well in advance that might safe you some money.
