I'm planning a trip this winter travelling overland from Mumbai to Saigon. Looking for advice from anyone with experience in border crossings, etc... in the region. I've spent time in India before and have never neen to SE Asia.

It sounds like a great trip,the only time you will need a visa is getting into Burma and Vietnam,all the rest of the countries you just turn up and you will get a 30day stamp on your passport at their borders.
Get your visa for Burma in Delhi,it starts from the day of issue and if you overstay in Burma you pay 5-10$US for ever day overstayed,remember to get the name of the jail where you are sleeping;only joking!!.
For Vietnam get your visa in Phnom Penh;Cambodia as it starts from the day you get it and it will take a day by boat down the Mecong River to get to Saigon,you can extend it in Vietnam.
Just have Lonely Planet SouthEast Asia and its got all the info you require.
