I'll be going to Vietnam, Laos, Thailand, and Cambodia from january to the end of march. I have no set plans so i'm worried about having all my visas in line. Do I need to have all my entry and exit dates on each visa for each country? or can I just wing it? I'd love some current info. thank you so much.

No need to worry just wing it. Thailand gives you a 30 visa on arrival and if you leave and come back it is renewed. For Laos and cambodia you can get your visas when you are there they cost around $20 USD or so. It's a peice of cake.
i even heard that u can have a visa on arrival when entering cambodia (not possible when i went).
but if u travel on a strict schedule, u might consider getting ur visas in bangkok quite ahead of time:
1) in khao san road or
2) directly at the embassies of laos and vietnam (i did the first at the embassy and the latter in khao san)
'coz it might take u 3-5 days to get them.
prices depend on how many days u're willing to wait for.
You get Visa on arrival at all SE Asia countries except Vietnam and Burma although you can have day trips into different parts of Burma without a Visa.
Best place for Vietnam visa is Phomn Penh in Cambodia as it starts from day of issue so just jump on a boat on the Mekong River and you will be in Vietnam later that day.
Laos you get on arrival and it cost 30$,Cambodia on arrival and Thailand on arrival.
