I have been told Pucon or Temuco are a good places to head for but I think they may not fit in with my timings. So I'm thinking Santiago -does anyone have any thoughts on either of these two destinations or any other to die for suggestions?

I do not know Temuco, Santiago is a interesting city.
Near Santiago that valparaiso and ViƱa del Mar.
To one hour to the south of Santiago this the vineyards Concha Y Toro, in this place you can make a tour in the plantations and the warehouses of the place, with a guide in ingles,if you need information of transports, they restaurant or another, you can write to my mail

If you'll still be there for New Year, then definitely Valparaiso. They have a massive fire works display accross the bay and people apparently travel from all over Chile to see it so the streets are full of people drinking and chatting...
