I'm flying to Hong Kong at the end of this month. I intend to spend a few days there before flying on to Shanghai. I'm surprised at how expensive the flights are between HK and Shanghai, considering its only 2 hours(so far quoted around £300 rtn).
Should I risk leaving it till I get to HK and booking at short notice, am I likely to get a better deal?

have you looked at going over to macau and flying from there? I booked a flight to BKK from Macau because it was almost $200 US cheaper than from HK.
This's an open secret... get over the border to Shenzhen and fly from there instead. Right now it's only 420 RMB (excluding tax) for one-way Shenzhen-Shanghai.
I would definitely agree about going to Shenzhen. I just had to fly straight from Qingdao to HK and it cost me about 5,100RMB round-trip (granted I was booking on very short notice and went by Dragonair, which is expensive to begin with)
If you can get to Shenzhen early in the day, or even a day before and spend the night in a hotel, it is still cheaper usually than trying to fly to HK. Then consider that its easily less than 100RMB to cross from Shenzhen by ferry, and then less than 20 HKD to get anywhere in hongkong from the subway station near the ferry port .(versus about 30 HKD to get to the central area from the airport (or more than 100 if you don't know your way around and take a cab or the "airport express"))
So Shenzhen to HK is a really good deal if you've got an extra day to spare.

Just done an Expedia for Shenzhen to Shanghai and it does work out cheaper - £216 vs £277 cheapest I could find to HK. Thats quite a decent saving for 2 people.

yes, the tickets from Shenzhen to Shanghai is cheaper than HK to Shanghai. In fact, u can look for some travel agencys, and let them book the tickets for u, that will be cheaper.

If you are at "Central" an aptly named part of central HK, you can take the subway to the shenzhen border, which takes about 10 minutes, plus a few more for walking to where you need to be. Expect about an hour for the ferry ride to Shenzhen, more if it is busy. Then maybe 30 mins or so to get to the airport, depending on the time of day and the taxi driver you get. There is a shuttle bus that runs from the ferry terminal to the airport, but it tends to be very crowded, and is kind of slow, so if you've got the cash to spare, go with a taxi.

you prefer?? During the low season, most of the airlines will
have promotional fare for this route.

Chinahat....sorry to tell you that it is impossible to get to SZ border from Central in 10 minutes by subway. By the way, you need
to take the subway (or called MTR) from Central to Kowloon Tong
MTR station. Get off the subway and then take the train to Lo Wu
which is the border of CHina and HKG. It totally will take you
more than 1.5 hours. After passing the immirgation counter of
HK and China, it will take you about 40 mins. by taix to the SZ
