five weeks to have a look around NZ will give you a chance to see most of the good bits.
From christchurch you can go either south to dunedin or inland to mount cook then across through central otago (Queenstown, milford sound, te anau, etc..) then head up the west coast (fox & franz Glaciers, hokatika, westport), then catch the train back to christchurch. lots of fantastic scenery, fishing, water sports, and other things to do that way round.
Theres not too much on the east coast from chch to picton (where you catch the ferry to wellington), apart from the whale watching at kaikora. Nelson bays (top of south island)is a lovely area (weather permitting)and there is the able tasman national park (great scenery and beaches).

I'm not too hot on the north island but there wellington- hawkes bay - lake taupo - rotorua - auckland - northland.
Hope this gives you some ideas, what ever you do, you ought to have a great time.

Hey Biz,

Hope you enjoy your trip. I'm planning on doing the exact same thing in March except I'll be going from Auckland down to Christchurch. Would be interested to hear what you've done, seen and how you found the whole experience!

Have fun

Noa

five weeks is enough to see it all! i did all this in 3 weeks:

SOUTHISLAND
- christchurch
- go west first to hokitika (famous for jade)
- and then head down the westcoast:
lake mathesson (?); climb the glaciers; milford sound
- don't miss Wanaka!
- queenstown is famous for extreme sports
- dunedin is a lovely students town; the otago peninsula the most beautiful place on earth (sea lions, pinguins, beaches, not very touristic...)
- then head up the eastcoast
- mt. cook
- back to christchurch
- Kaikoura is famous for whale and dolphin spotting
- Nelson is sunny and beautifull
- do some kajaking or trecking at the abel tasman nationalpark
- head back to Picton and get the ferry to the nort island (through the fjords)

NORTH ISLAND

- Wellington the capital
- 6 hours trecking at the tongariro crossing = tough but it's worth it (volcanic area and beautiful lakes)
- don't miss Taupo! (you can do a skydive here, it's realy cheap!)
- Rotorua smells like rotten eggs =)
big maori culture here, volcanic area
well-known for bungee-jumping
- cave-rafting in Waitomo is great + Raglan nearby (go surfing)
- Auckland (big and ugly)

(You will have enough time to head north of Auckland to the Bay of Islands and Cape Reinga; the Coromandel Peinsula was nice, too. I loved the East Cape with it's untouched nature. Napier at Hawkes Bay is beautiful as well.)
