If you only have a week you won't get to see a lot, but I love Vietnam and can't wait to get back. I spent six weeks there last year.

In the North
You could do 3-4 days in Hanoi and head up to Sapa (a day or two at most) then a day or so in Halong(spelling?) bay.

In the South
Otherwise 4 days in Saigon and a couple days in the Mekong delta make a nice trip. (Food is better in the south)

If you are more into something kind of more laid back then a few days in Hoi An and a few days in Na Trang would be my recommendations.

I'd probably skip Dalat although it's interesting, it's too touristy of a place and kind of campy.. it's the honeymoon capital of Vietnam.
