Brugge in Belgium is one of the most beautiful cities I've ever seen, although I can't see how you'd squish it into your itinerary. Keep it for next time! Remember, too, that southern Europe gets almost unbearably hot in summer. I've heard many people say they'd have skipped Barcelona in July, just to forgo the heat. Mind, I've never actually been myself, so it's second-hand info...

I just realized you're flying from Toronto. Have you bought your tickets yet? Fly Zoom has some great specials to Paris, or alternatively you can fly to London and then take Easyjet or Ryanair to Paris for cheap. The only annoying thing about those last 2 airlines is that they tend to land in out-of-the-way airports, so be prepared for a lung haul into the city.
You had mentioned that you will be in Venice, I highly recommend taking a 2 hour ferry ride to Pula, Croatia. It is absolutely amazing.
I see you've changed your plans so what I was going to say isn't really relevant anymore but I shall say it anyway! Bern is probably my favourite place of those that I've visited so I was going to say if you stay there for 4 days instead of 2 then that would be better as you can vist Luzern as a day trip from Bern very easily as well as there being other places you can visit around there. I always think it's better to stay for a sustained period in one city as a "base" if you want to call it that, than constantly moving around to different cities and staying for a couple of days in each.
