I am flying from Canada to UK. Can I book one way, so I can leave my departure date open-ended? Do I have to book round trip?

You do might not need a visa as a Canadian going to the UK, but as in any country, you have to convince the immgration officers that you intend to leave their beautiful country in a foreseeable time. The most important of these documents to do this is a flight ticket.

Here are the rules for tourists entering the UK:

If you look closely at the rules above (paragraph 41 ii), you'll find that having a return flight ticket might be a smart idea if you want entry into the UK. May be a return flight ticket with an open return date might be your solution? I think British Airways offers these.

For visa for Canadian people I have no info but I know several Americans have made a flight to London and than went to Amsterdam, Bruxelles, Paris, Barcelona, Monaco, Milano, Rome and fly back to the USA from Rome.
