There are too many places to see in China, it all depends on what you want to see, eat, or do!
Having said that, I'd go to Yunnan in a heartbeat! Same reasons as what nico_b stated.

I just returned from two weeks in Yunnan province, including three days trekking in Tiger Leaping Gorge. While I haven't been to other parts of China, I can say that that area was AMAZING. The gorge was breathtaking, the people were very nice, the towns along the way (Lijang, Dali) while very touristy were actually a lot of fun if you like people watching as most of the tourists were Chinese people taking in the sites of their own country. Starting and finishing in Kunming, the trip was very manageable in two weeks. Have fun.

I think you can choose some special places to visit. Beijing, Xian, Yunnan, Shanghai, Tibet and Guilin, you can't miss them if you want to know Chinese culture. Especially Guilin, it's very famous all over the world. Guilin is in Guangxi which is a mystic area. You can visit Guilin's beautiful hill and clear water, join the clan of Zhuang minority, and enjoy Detian Waterfall- the biggest transnational waterfall in Asia.

Guilin is reputed as the most beautiful scenery city of China. Its peaks rise as suddenly from the Earth as trees in the forest, in various shapes resemble buns, camels, fish, saw-teeth, horses, etc. it is the city you must visit it or you will miss the most beautiful landscape out. the river is like green silk ribbon while the hills seem hairpins of jade.The landscape in Guilin is characterized by its “green hills, clear waters, pretty rocks and fantastic caves’’.

Guilin Yangshuo has the reputation of having the most beautiful landscape under heaven. It is a dream place for many tourists who want to see the real natural landscape and touch the countryside life.

Hilltops pop up from nowhere like trees in the forest and they are shaped like buns, camels, fishes, saw-teeth, horses, etc. It is a city you must visit or you will miss those beautiful landscape there. Rivers flow around like green silk ribbons while the hills reveal themselves as jade hair-pins. Guilin embraces great landscapes like green hills, clear waters, pretty rocks and fantastic caves.

I'm getting a certain sense of deja vu, involving buns, saw-teeth and horses.

Anyway, I was in Yunnan last month and I would thoroughly recommend it, it was probably the most remarkable short holiday I've been on - the Tiger Leaping Gorge trek is indeed fantastic, though I personally found it quite scary, it was worth it for some of the most amazing scenery I've ever seen. I also particularly enjoyed Zhongdian, including the Sompasteling monastery, and cycling out to Naxi villages near Lijiang.
