Just wondering if anyone knew how easy it is to travel by public transport from San Francisco to L.A. but going via the Grand Canyon and Las Vegas. We only have about 8 days to get from San Fran before we fly out of L.A. so any suggestions for how to arrange this prior to depature would be appreciated

Try googling bus companies in San Francisco. There are a number of companies that run between San Francisco and Las Vegas. From Las Vegas, you can organize a day trip to the Grand Canyon. From Las Vegas, you can get a bus to Los Angeles.
Greyhound should run all the routes (SF -> LV, LV -> LA), but there are other companies as well.
Why not fly? That is a well traveled route and you are bound to find some great deals, besides it will be much faster given you have so little time. It will eat up a lot of time going via ground transport. The scenery is great along the way, but you'll see some terrific stuff when you get to the Grand Canyon anyway.
I would say, fly from SF to LV. Rent a car in LV and drive from there to the Grand Canyon via the Hoover Dam and on to Arizona (to Kingman and on to Flagstaff and up to the Grand Canyon). Reason you would want to do the ground transport here is that the scenery is unbelievable. If you don't want to or can't drive, I'm sure there are buses that do that route frequently. Then when you are done at the canyon, either go back to LV and find a cheap flight to LA or maybe there are cheap flights from Flagstaff.
