Everglades City on the extreme southwest coast is a likely candidate.
Lots of wildlife, there is always somewhere to head regardless of wind. Several local operators.

The keys can be beautiful but you have to contend with psychotic jet skiers and heavy boat traffic.

If you are game for freshwater, the Peace River is beautiful.

I agree with the previous post, the everglades are probably your best chance at seeing some really cool wildlife. But, anywhere on the Gulf Coast has great kayaking opportunities. Mangrove islands are really neat to kayak around and through...just be careful you pay close attention or you might get lost. I live near Naples and there are plenty of great spots and rivers around here. You are almost guaranteed seeing porpoises in the intercoastal. Fort Desoto near St. Pete, Weedon Island and Shell Key are good, also. A little further north has a lot of spring-fed rivers and a lot less people. May be able to find manatees still in those parts, although they may have moved out already. Are you going to be going to a particular area? If so, I may be able to get more specific. Good luck!

thanks very much for the tips. i am not going to one particular area. my friend and i are landing in miami where we pick up a car and we´ll just see where we go from there. i was asking about good sea kayaking sport so we might be able to plan our trip around these places. which may be quite difficult as my friend is into other things than i am. she´d rather hit the shops...
