I don't know really about Ibiza (there is one I know called Hotel Na Xamena, but that's all about it), but near Palma de Mallorca (business all year round), you have quite a few up-scale hotels such as:

good idea to learn spanish away from the coast, we live inland from the costa del sol, and if you came here working in a bar, i expect english would be the only language you would end up using!
accomodation here is about 500€ a month for an apartment on the coast, depending on size of course, the figure could be much much higher.
food is cheaper than england still, but only just, things have changed alot over the last 8 or 9 years with food prices.
if you need a visa, you much sort that out first, its so hard to get legal jobs here anyway, with contracts, lots of bars will only want to pay cash in hand, its better to be a legal as you can, and also as soon as you arrive you must go to the police station and get your NIE number, you cant get a legal job without that, if they take you without it, you can be sure the job is without contract!
sorry, to sound like this, but we learn by out mistakes and i really wish there had been someone to help me out when i came here to live, no one even told me i had to be fiscal resident, not just a resident!
