Good to finally here some positive stuff about Iran. I'm headed there early next year and have been looking for some informed advice. Any highlights not to be missed?
How dodgy are the borders with Pakistan and Turkey?

Border with Turkey no problem, but it was evident that there had been some serious local fighting between the Turkish army and radical Kurdish military groups a few years ago. Our car got stopped on the Turkish side several times by Turkish officials looking for drugs and weapons.

If you take the bus from Van to Shiraz or to Orumiyeh you should have no problem at all. Just get your Iranian visa before you go.

BTW, if you are a US-citizen, you'll need to be with a guide all the time. You should arrange this before you leave, there are travel agencies where you can hire a car with a driver who will double as your "guide". He will likely be not very useful to you, as his primary function will be to watch you, not to explain the sights to you. But it is doable to travel individually in Iran even as a US-citizen, so don't let this rule discourage you.
