Thanks for replying and all the suggestions. I would spend the two days with a trip to Hoover Dam, Clark Country Museum (any good?), Neon Museum (worth it?) and Chinatown (any difference with other Chinatowns in the USA?).
I guess I'll be spending a lot of time shopping at Forum Shops and Fashion Show Mall. Yeah and I would love to go to all the hotels in the Strip and snap as many pictures as I can. Lol.
I'm definitely gonna try the buffet at the Mirage and TI. Should I wake up as early as possible to avoid the long queues for breakfast?

If you like the outdoors at all 2 suggestions. First Red Rock canyon just outside of Vegas. Can't post a link but if you Google "red rock canyon nevada" you'll find a blm.gov link for it. If you like shopping and the outdoors drive south on I-15 to the Silverton Hotel and Casino and go to Outdoor World. Just fantastic for an outdoors enthusiast.
Dont worry about the queues at the buffets - the rooms are HUGE and even if there is bit of a queue they move quickly and there are lots and lots of tables! Enjoy them they are wonderfully good!
Just as a side-note Terribles does great buffet breakfasts for about $5 lol
