I find just travelling rather boring and depressing or too tiring so I would like to work or do volunteeringwork to learn a bit more of the country. I`m interested in the south american westcoast (Chili, Peru, Bolivia, ...), out of the big cities. Anybody have advice or good experiences. (I almost never commit for longer than 1 month)
Also preferably without having to plan long ahead.

That's a lot of demands you're having. I don't know of any organisations that would be willing to accommodate them; most of them require >1 month availability, and want you to commit yourself months in advance. But you could try this website; they used to keep an extensive on-line database of volunteering programs, there might be something there.
have a look at volunteer latin america - (just google their name, don't think I can post web addresses here) they have a very extensive list of organisations that accept volunteers, and will compile you a list of about 20 orgainistions that fit with your individual interests and criteria. (you have to pay a small fee though - but I think it's still good value for money).
Also - if you have any interest in organic farming, you could join wwoof independents. There are about 13 farms in Ecuador and a few in Peru, not sure about in other South American west coast countries. There are definitely some in Argentina and Brazil though.
The only problem I think you'll find is that most places will ask you to commit in advance - if you ring up last minute you might find that they already have all the help they need.
