Air New Zealand are very good by the way (just flew them down to Oz a few months ago). Better than Qantas in my opinion in terms of service and they have pretty good entertainment and food. Interesting info: they have a lot of male stewards on their international routes (not saying it's better or not, but it always struck me as interesting information). Usually you get one or two free stopovers in the South Pacific with them as well, which can be nice.

Oh, and if you are flying with them, you can sometimes get Singapore Airlines on the way back as it's all part of the same 'Star Alliance'. Singapore Airlines are great, so ask your agent about getting on one of their flights if possible!

An open ended ticket means you don't have a return date set I believe. Usually a bit more expensive but very flexible.

December and January are the most exspensive times to fly to Aus, looks like the cheapest one way ticket would be around 1300
