Here's a few:

Peru: ceviche (fish dish)
Ecuador (actually, all Quechua regions): cuí (roasted guinea pig)
Argentina: lots of meat, with chimichurri (a kind of spicey salsa)

Many of the indigenous people furthermore brew a kind of beer, for which they use saliva as a katalysing agent for the fermentation process. The name escapes me right now...

If you came to Lima - Perú:

Ceviche (amazing row fish cooked with lemon juice)
Chifa (chinese food with peruvian ingredients)
Causa rellena, lomo saltado, papa rellena, chupe de camarones, parihuela, etc (my favorites)

To drink:
Pisco sour
Chicha morada

In highland:
Cuy (fried guinea pig), charqui (dry meat)
to drink Chicha de Jora

I think Peru is one of the best countries you can have delicious food, enjoy it!

I don't mean to be rude or cheeky but isn't part of the thrill of travelling working these things out for yourself?

A bit of trial and error and all that.

Failing that I am sure you will find that you can get meat and fish almost everywhere.

Two words for Argentina :

Jamon y Queso !!!!

Every-feckin meal has "Jamon y Queso" on, in, with or near

PS agree with the others.... that´s one of the main things about travelling is discovering these things out for yourself.... you´ll make some mistakes along the line.... Spinach and Onion Pizza being my worst at the moment but other than that.... it´s fun !

I have to agree with Taffski about the jamon y queso. It's everywhere in Argentina:)! As well empanadas are quite popular.
