Arrival in Brussels, Train to Bruges
Bruges- 2.5 Days
Amsterdam (via morning train) - 3 Days
Berlin (via late overnight train) - 4 Days
Munich (via morning train) - 3.5 Days
Innsbruck (via morning train) - 1.5 Days
Scenic Train Route from Innsbruck to Venice - .5 Day
Venice - 2 Days
Florence (via morning train) - 3 Days
Rome (via morning train) - 5 Days
Paris (via overnight train) - 4.5 Days
$60/day X 30 days = $1800 USD
Eurail SelectPass Youth (8+1 Travel Days in 5 Countries) = $418 USD
Total Budget (without airfare) = ~$2250
Try to fly Amsterdam - Berlin (transavia.com),
Berlin - Munich (Germanwings)
and Rome - Paris (Easyjet). (don't use Ryanair, as they fly on Beauvais Airport, miles away from Paris).
In that case, I think you can save on travelcosts and time (buy normal tickets for Belgium, Holland, Germany, and you have have no need for France to be on your pass).
If the 60 dollars have to include accommodation, you might want to make that 60 euros.
If you are visiting museums in Florence, make sure to make reservation by internet, that way you can save yourself time to stand in line (some museums have serious waitinglines there).
For the two overnights trains, you need to calculate an amount equal to a night in a hostel for a courchette.
The number of days look alright.

Those airfare prices are fantastic.
However, if I get a Eurail SelectPass Youth 8+1 Travel Days in 5 Countries, it'd still be cheaper, I'd just lose out time wise.
Cost would be $414 USD.
One change I decided to make.
2 Days Munich
1 Day Travel from Munich to Gimmelwald (via Interlaken)
2 Days Gimmelwald
1 Day Travel from Gimmelwald to Venice (via Interlaken)
