any suggestions on where one would experience more thai culture in an area where isnt over crowded with tourists??

In fact different part of thailand u will experience slightly different in culture but if your concern is mainly about too much tourists then chiang rai will be a better choice.

Much fewer visitors in Chiang Mai, trek from there.

You'll find more tours and transportation options leaving from Chaing Mai. I spent a tad bit of time in Chaing Rai and I was really impressed. I thought the place was very clean, nice roads and quiet, but I also felt like I stepped out of Thailand in a way. We took a longboat up the river and there were quite a few really nice houses. I have a feeling there were quite a few non-Thai people living up there.

Chaing Mai was more crowded but not unreasonably. Not nearly the noise, smog and hagglers as Bangkok. If you stay around the Night Market or train station it will be busy. If you stay within the walled part of the city it is quite quiet and a good experience. I stayed at a place called Seven Suns and it was great. Clean, very quiet, friendly and on the back streets with the Thai people.
