I think I would go for a greek island. You cant get more culture and beaches so close together as on the greek islands, especially only for 1 week. Mind you, I probably wouldn't rule out any of the other ideas! Greece is also very cheap in the shoulder season but it is still very hot there at that time of year, so they would be my reasons for going.
Italy - Rome, Florence and Venice are not that far away from a beach. IIRC it is only 30 minutes by train from Florence to Rimini, and if you stay at the Lido in Venice you have the choice of taking the waterbus into Venice proper or walking down to the beach.
Thanks for all the ideas guys, there's some brilliant suggestions here, think we're going to not do Greece as my boyf has lived there and not done too much other travelling so I'd like to go somewhere neither of us had been already!
Croatia is a definite maybe and I hadn't thought of Sardinia, thats a great idea!

Another suggestion comes to mind: the Azores! Probably one of the least visited places in Europe, although it has become more and more popular last year in Holland, although still just a small market for it. You can have a few showers, but it is much more green compared to areas in the south of Europe and you can do some whalewatching tours as well. It has volcanoes, a few beaches and of course all the things Portugal has to offer on culture, food and wine.
Spend a week there would be wonderful!!!
