We will be visiting family while out there in UT and with such a short time frame, I would like to know if anyone can suggest a good day trip. I was initially thinking of Yellowstone, but that might be too far for one free day. I do want to see some wildlife and beutiful landscaping so something covering those two things would be very helpful.

A good day trip out of Salt Lake would be one of the following two trips:
Trip 1: Head east out of Salt Lake City on I-80 for about 20 miles, then take the exit to Park City (state highway 224).
Park City is the best known sky resort in Utah and the home for the US Ski Team. If it's summertime, continue on state highway 248 out of Park City 6 miles to Kamas, and then take state highway 150 another 15 miles or so to Mirror Lake. Then return the way you came--or continue up 150 to Evanston, Wyoming and return via I-80.
Trip 2: Just head southeast up the road to Alta and Snowbird (about 23 miles outside of Salt Lake. Great skiing in the winter and great hiking in the summer--or just a place to catch the scenic mountains.
P.S. While in Salt Lake City, be sure to take one day and go to dinner at "La Caille at Quail Run". It's just off the road mentioned in trip 2 above--and here's a link to show you what it looks like and why you should go there.
I think this is the most romantic place in SLC to have dinner (although Nino's has a great view overlooking the Utah Capital as well).
