I'm in Holland for a year and my cousin is coming to vancouver to spend a month with me from middle of dec to middle of jan. Our starting point is amsterdam but we cant decide where we should go and what should we see??
We were thinking ireland & scottland.. but is chirmstas a good time to go there??

Honestly? Don't come to Scotland. Unfortunately, our tourist industry is on the verge of pricing itself out of the market, especially at Christmas time.
Where is your friend visiting from? Why not tour around the low countries?

Netherlands, Belgium, Luxembourg . . . keeps you near to your base.
Berlin is great for the xmas markets & new years is pretty cool too.
I've also been reliably informed that Hamburg & Dusseldorf are also good places at that time.

I hate the UK and Irland for Christmas, because I like Christmas either with snow or with beach and sunshine. In the UK it is bound to be wet, cold and rainy - and expensive too.
I think you need to make a decision what kind of weather you want and than pick your destination based on that.
However, if you are up for something a bit crazy, go to Jerusalem for Christmas. You can fly from Germany to Israel for about 200 EUR return (300-400 EUR during Christmas time) with Tuifly and Israir.
You can use skyscanner.net to find cheap flights. Best deal seems to be on Dec 20th from Munich for 124 EUR from Tuifly and return on the 27th to Munich for 104 EUR. Train tickets to Munich are 120 EUR one-way, but special offers are available. (KLM charges 490 EUR return from Amsterdam for flights leaving 21st Dec and returning 28th Dec.)
