Me and a few friends are traveling to oz on 25th May next year where we are picking up a campervan from Cairns and are planning to travel down to Syndney along the coast stopping off along the way. We are planning to do this within 10 days! I've been told by a few people that this is no way going to be long enough but my friends have reassured me that it is...can anyone advise us? Also does anyone know of any good places to stop? We are all aged between 21 and 25 and like to party but are also hoping to see a few sights.
Cairns to Sydney is 2600+ kilometers (assuming you're following the coast; but even cutting off a bit doesn't get the distance below 2400km). That means that you'd be driving for 3-4 days fulltime to do that distance, or in other words that you'll be in the car 40% of the time. That's absolutely not worth it.
I've done similar distances, and it's doable when you're sharing the driving, but really, you're exhausted afterward (needing at least a day to recover), and there will be so insanely much to see in between that you won't have the time for.
What I'd do instead, assuming ten days on the East Coast and wanting to do some travelling around by campervan, is three days exploring Cairns (easily filled with a reef trip, a Cape Tribulation daytrip, and a day exploring Cairns itself (plus maybe seeing Kuranda)), a flight to Brisbane, a day in Brisbane, renting a campervan and three days driving down to Sydney (stopping in - for example - Byron Bay, Coffs Harbour and Port Macquarie), and three days exploring Sydney (maybe with a daytrip to the Blue Mountains). You'd still be rushing, but at least this way you'd actually get to see a bit of the places you'd be passing by.

Girlfirend and I did Brisbane to Sydney in Campervan in August. Think it was 1100 kms. Thats a bloody long way nevermind Cairns to Sydney!!!
We did it over 6 days.

It does sound like a hectic drive!! It's very possible to drive the distance in that time if you want to view the places by road, but it's not going to be great if you want to explore the places themselves. And as you do the drive you'll quickly realise there are many times you want to stop and explore somewhere, it's all so beautiful! I think if you drove it you'd end up desperately wanting to go back one day and explore more. If all you're wanting to do is get from Cairns to Sydney then fair enough, but if it were me I'd want to take photos and explore places properly, which you just won't have time for on that schedule.
My boyfriend and I had a similar idea and in the end because we only had 2 weeks to do the same stretch (in the opposite direction) we took flights (1 from sydney to brisbane, 1 from brisbane to airlie beach, and greyhound from airlie beach to Cairns). This meant we saw less road and more scenery, but we did miss out on the coastal drive.
