Four of us are visiting Vietnam from 30Dec-26Jan (28 days). Our specific likes are scenery, the local people, adventure (though 2 of us are over 50 years old), local food, wild-life.
Our loose itinerary is as follows (we don't pre-book accommodation, for flexibility) - Saigon (Cholon & Ben Thanh markets, water puppets, Chu Chi tunnels, War remnants museum), Phu Quoc (motor bike), Can Tho (boating inc markets), Dalat, Nha Trang (boat tour to Mun Island, Bai Dai by motor bike, Yang Bay waterfall and Raglai village), Hoi An (Cam Kim Island, Cham Island, My Son ruins), Hue (DMZ tour, Thien Mu temple), Ninh Binh (Tam Coc boat), Halong Bay (Cat BA, boat tour, kayaking), Hanoi (National Museum of Vietnamese History , Temple of Literature, Vietnam Military History Museum, Vietnam Museum of Ethnology, Hanoi Hilton).
We will probably miss Sapa mainly because it will be really cold but also due to time constraint.
Can anyone recommend additions or subtractions?

Steve,
I like your basic plan. The water puppet show is in HaNoi, not HCMC. Allow a few days in DaLat to hit the waterfalls and minority people. One place renting a motorbike might be a good idea. If you can swing it, going up through the Central Highlands would get you off the main tourist trail. I have photos in my gallery of most of your planned itinerary.

it will be the biggest mistake of your life to miss going to sapa. make time for it! trust me

I can recommend Mui Ne - a 4 hour bus ride from HCMC. A quite out of the way beach resort - there are amazing sand dunes (red canyon it is known as) which look amazing and you can visit - either by tour or hire a bike. Lots of water sports jet ski, kite surfing and surfing. Also just a great place to chill on the beach with a book and a beer!

I have to ask since i also plan on missing sapa just b/c of the distance and time i have but i keep hearing about not missing it. can i ask what the big deal is - i've been reading and it sounds nice but nothing special? Let me know cause if i should i'll try to work it in.
