I was just wondering how hard is it to get a work visa to Australia? Is it likely that they would reject an applicant a visa for having a DUI on there driving that may be considered a 'criminal offense' even if it has been spent and is from five years ago?
I was just curious, as I am planning on going to Australia in October

I very much doubt it. I got one a couple of years ago and when I took it up to Australia House to get authorised I was in and out in 15 minutes and they barely looked at the paperwork. I wouldn't bother about getting an agency to do it as I think it is a waste of money, better spent sightseeing.
You can always contact an agency to see what they think first.

These days the applications are online so it's slightly different. If you enter the information as requested your visa won't be processed as quickly because it will raise a red flag. I suspect you still would be able to get it but it will take longer than normal and maybe require some extra paperwork back and forth (to Tasmania where the visas are processed these days).
