At peak season, Mumbai-Goa sleeper trains can get booked up a few weeks in advance, so I've been told. Rest of the sleeper trains I used in India I booked when I arrived in each city, or the day before I planned to leave. Ended up getting a bus to Goa, personal choice.

i reckon stay in mumbai 3 days and book the train tickets on day 1 of mumbai
surely 3 days in advance is enough time to get a reasonable sat
if they dont have any seats for 5 days it just mean stay at mumbai for 2 more days, theres gotta be lots to see around there anyway
