I recently visited Cappadocia and found it great. As I met some very nice people that helped a lot - I would like to recommend them.
We were a group of 6 people. We slept in Ϋuksel hotel (www.yukselhotel.net). It's a new hotel in the center of Goreme. It is owned by Ϋuksel (an elderly guy, speaks good English) and his son Mustafa (also very communicative and helpful). For example, despite the fact that the hot-air balloons were fully booked for a few days, they manage to arrange for us a place. We like to play Bridge so he arranged a table for us on the first floor, etc.
We also met Faruk (he arranged for us the balloon). He works in a motor agency (Oz cappadocia). We rented little tractors from him for a ride in the surrounding valleys. It was very beutiful.
At last - food. By accident we found a restaurant on the way from Uchisar to Nevsehir (Asiyan restaurant). The owner (Ali Yedekci) is very nice. He serves fresh salad (really fresh!), grilled fish and fresh French fries. Great place.

Have fun
Hagar

I paid about $10.00 (or thereabouts) for my own room in a place in Hisaronu (near Fethiye), but it was pretty bad. It look okay but it ended up being full of fleas. Plus, the shower ended up wetting the whole room.

So it can be very cheap, but also a tad nasty.

You should budget around 35 EUR per day and person in Turkey. I ended up paying around 10-15 EUR per night in various places all over Turkey. This was on the cheap side of things with reasonable cleanness. I think it depends on when you go, haggling is possible if there are a lot of free rooms (spring and autumn).

Yeah it totally depends on where you go, you can get shite for 15 euro or total awesomeness for 10.... but I'd say 8-16 is a good budget for cheapo accom.
