If someone could offer me some quick advice as to whether or not the above mentioned itinerary is doable in 3 weeks or if I'm craming too much into too little time? Any additional notes or recommendations on this itinerary would be greatly appreciated. I've yet to have been to Europe so this trip is super important. I'm thinking of buying a Eurorail pass for one month (might extend my trip to 4 weeks), what do you suggest? What are the costs? I'm 26 yrs old.

Yes, you are cramming in too much.
For 3 weeks I would just go Paris-Venice-Verona-Florence-Rome. For 4 weeks you could add Amsterdam to that.
I think you need to decide what you want to see, Italy, France or Spain.
If you just visited the cities (Amsterdam, Paris, Barcelona and Verona) it might be doable, but I don't recommend that at all.
A month in Europe is usually around 1500 EUR plus the flight. From China you are looking at around 2200 EUR, that is 24 000 Yuan. For this amount of money you get food from the supermarket and a bed in a hostel dorm, plus looking at most of the sights from the outside for free. You could do it cheaper by using sites like www.couchsurfing.com or by bringing a tent and staying on camping sites, but that is up to personal preference.
Eurail pass is not the cheapest option to get around. It can be the best, but it depends upon the time of the year you want to go and what you want to see and your level of comfort.
