One way is Air Asia for Bangkok-Macau, and then a ferry from Macau-Hong Kong. Ferries run 24/7 and are not expensive - flights on Air Asia can be cheap too if booked ahead!

The best route would depend on how long you want to spend and what you want to see? If you have the time, then I would go via Northern Laos into Vietnam and then to Hong Kong via Halong Bay.

If you have even more time then you can add Cambodia to your itinery. Alternatively you might want to go through Kunming in Southern China instead of Vietnam. The possibilities are endless if you have the time, but as a UK citizen you're going to need visas for Laos, Cambodia, Vietnam and China, so it would be simpiler to limit the number of these countries you go through if you don't want to deal with/pay for lots of visas.

I have used China Airlines in the past. They leave in the daytime, some other airlines have you leaving or arriving real late at night.
China Airlines flights were pretty cheap for a major airline. I found it easy to purchase a plane ticket in Bangkok.

Good luck.
