I was thinking weatherwise it would be wise to stay south. We're also on a tight budget so maybe only a few countries. We live in England.
I thought maybe at first it would be nice to rent a car and go down through france to portugal & spain. But with petrol prices as they are maybe a Eurail is the best bet?
Anyway I'll admit total cluelessness! So if I could have any ideas at least I would have some basis on which to begin research. Although I really like portugal so would want that to be on the list, but I'm open to any suggestions!

However, I see you are from the UK, this won't be helpful for you.. I might suggest ou few things..
If you want to drive, Spain and Portugal is the best way to drive from the Uk both because of the weather and the location (not very far from the Island)
If you might take a plane and want to visit a calmer, sunny place, you may try Turkey. If you haven't been to Turkey, it is a good option. Weeather is usually calmer than anywhere on Western Europe by November with very occasional rains and usually warmer than a typical London spring day or summer night.
Both in Spain/Portugal and in Turkey, you have many options - I will try to answer as much as I know if you ask something to me.
