Does anybody know a must-seen in on the yucatan peninsula that is not "that" touristic?
or does anybody know some good backpackers hostels there?

I can only tell from my experience a few years ago, but really loved Isla de las Mujeres and Tulum.
Of course there were a few people around, however it was much less touristy than terrible Cancun or Chitzen Itza.
Can't remember the name of the hostel we stayed at on the island (wouldn't recommend it anyway), but in Tulum they had huts (without electricity!) you can rent right by the beach. Wonderful way to kick back and relax for a couple of days ;). And if you're up for some activity, definitely consider going diving around there.

I agree with Steff that Isla Menjures & Tulum are beautiful. Although, both are still relatively touristy (but, I expect less so than Cancun and Playa del Carmen). I think it's difficult to get away from tourists in the Caribbean! I also visited Merida and Valladolid which are both lovely towns and not overly touristic, Valladolid being very small and close to some amazing Canotes - you can also go out to Chichen Itza from there.

Go to Merida and spend a few days exploring the city. It's small enough to get around quite easily, and you can book day trips from there if you so choose.

Isla De Mujeres is quite interesting as is Tulum, but my favourite place was Chichen Itza.

It's all quite touristy actually, but to me it's all worth a look.
