I was friends with some girls a few years ago in auckland who did cash in hand work - cafe work, painting and decorating and anything else they could find. It is possible, but the work would tend to be low paid, and if you get found out you would most likely be deported. It depends how long you want to work for and how much you need to earn - if it's just casual stuff here and there while you travel you should be ok to pick up bits and bobs.

Another alternative though is to apply for jobs on your tourist visa and then apply for a work permit on the basis of your job offer, if you want to stay and work for a longer period of time. this is a legitimate way of doing it, and once you have your job offer you should get your visa through fairly quickly as there is a labour shortage in many areas here so they are keen for skilled people to stay.

If you are caught working illegally you will be deported and your name goes on a data base, not just locally but overseas as well. You will not be permitted to return for a number of years and if you do wish to return, the information will come up and they could refuse you and if they do let you in, they will check up on you.
