Ok here is the deal:
My wife and I (27)will be doing a RTW starting in June of 09'. We are both huge into cooking and would love to hit up some cooking schools around the world on our trip. We are open to all cuisines and aren't scared of much food wise. We are doing 2 months Africa, 1 India, 3 SE Asia, 4 S. America, and 1 C. America.
Anybody have an suggestions on cooking classes, schools, or even one day lessons in any of these areas?

I like cooking too. There's a big difference in what the west describes as a traditional dish from 'india' and an actual indian dish.
When visiting a few places I have really wanted to learn how to prepare something from that country. Quite often I will simple show up at a local food market that has people cooking in it. Apear once or twice as the same place I like, and complement the person cooking. Strike up a friendship, and then ask to help out if they can show you a few things!
I've really had a blast in a few places doing this. Especially Nepal and w.africa.
Not sure if this is what you were looking for, but it's just a suggestion.
I did a day course at this place in Chiang Mai and would definitely recommend it. They take you to the local market beforehand to buy all the ingredients, and then you go back to the little school (their house I think) and eat it all afterwards. It was great! they also give you a recipe book to take away.
