1. Is it possible to do border crossing or land travel by land to China from Laos?
Given the Tourist visa requirement, that one must have airfare tickets, entry and exit.

2. When will the Olympics end???

Well, plenty of people seem to enter China overland, so I'm sure flying is not a prerequisite. There's no trains in Laos though, so you might want to catch a bus to Hanoi and then get a train from there to Beijing. Also, have a look at the guide article on Overland Border Crossings in China - it's quite useful.

The Olympics end on the 24th of August.

Theres a border crossing into China from Northern Laos, at Boten to Mengla on the Chinese side. You can take a bus up from Luang Prabang to Luang Nam Tha (12 hours) and then transfer the next morning by sawngthaew (local "bus") to the border. The nearest major Chinese town is Kunming.
