Everyone has posted good tips, so I'll just add a few：
1. Try a bite of everything, when you go to a restaurant, or are in a local person's home. Dog stew or fried silkworms, you never know how delicious it is until you try it!
2. Book a hotel/hostel room ahead, or arrive early in the afternoon. If you wait until evening, chances are that small hotel or hostel will have no vacancies, or if they do, you'll have trouble negotiating a lower price. There are sites where you can book hostels online, around the world. I did that on my Trans-Siberian trip, and often saw other travellers arrive without reservations, and get turned away.
3. Don't get drunk with strangers. I mean, pass-out drunk, in a bar far from your hotel. Make sure you have a friend to see you back to the hotel, or your hotel room is nearby (like, upstairs from the bar).
