I'm a traveller with only a bit of experience through Europe and Canada.
My girlfriend and I are planning a month and a bit trip through SE Asia, but are not comfortable enough to organise our own way around the region, and our parents are also cautious about this.
We were considering an intrepid trip through the region, namely Intrepid's Indochina Encompassed.
I know most people here are towards making their own way through countries, but has anyone on the site ever done this trip, or a similar one with intrepid? And what was your opinion of the trip?
Note that a tight budget is also a key factor in the trip.

I wouldn't waste your money taking a tour for the whole time. I can promise that once you get there you will find organizing travel around SEA as easy as traveling around Europe. But I can understand that you are nervous about going to a place that you don't know about, so maybe you can take a tour for the first week until you are comfortable with the place. Then grab a guide book and go out on your own. A guide book like Lonely Planet will tell you how to find a train/bus, suggest places to eat, tell you what's interesting to see, and suggest hotels. You will have absolutely no problem organizing things yourself - just as thousands of travelers do daily. You will also save a significant amount of money doing it independently. I haven't done the math exactly, but the cost of this trip is around 3 times more than I've ever spent in a 40 days in SEA. The trip is about $80 a day, and there is no reason why a couple can't keep their budget in the $20-30 range each doing it independently.
If I was you I'd do it alone with the girlfriend a million times quicker than with a group, just my opinion but I need the freedom and love finding things on my own. Ive only been to Thailand and Nam in SE Asia but it's ridiculously easy to get around both of these countries. Best of luck!!
