Metro and RER--they'll take you everywhere. Actually, Paris is a great walking city, too. There are Metro stops on just about every street corner, so sometimes it's just as fast to walk..

Paris is a great city for walking if you are staying in the inner arrondisments(suburbs), as mentioned Metro also good.

Definitely Metro is the easiest. On average each station is 500m apart so you can walk if you want to. Paris is also becoming a biking city with biking lanes so you can try that as well.

The Metro, as has already been mentioned - is just excellent in Paris.
For Spain, why not take Eurolines Coaches from Paris to one of it's numerous destinations. They's not as fast as a plane - for sure, but you'll still be there in under a day, they're cheap and you see so much en-route.
