I'm going to NZ in August '09 and so far my homework has lead me to this:
North Island - the Cultural Island
South Island - the place for adventure!

I chatted to the fella at my local Kathmandu Shop when I bought my sleeping bag and he recommended the following:

North Island - visit the Coromandel, Hot Water Beach. Go sand Dune Surfing at Capr Ringa (Far North). Waitomo caves - see the Glow worms and the Gondola Ride and Luge at Rotorua.

South Island - Take a daytime wilderness cruise at Doubtful sound. Skiing, Bungy, White Water Rafting and River adventures.

Have fun!
Cheers.

yeah the last post just about covers it.

I'd like to add wellington to that list in the north island. it's just a good city, nice and compact so you can walk around, it's very lively! oh and the tongariro crossing near taupo

oh and franz josef on the south island
