I couchsurfed in Istanbul and it was definitely the best way to get to know the city and its locals.
Totally loved it! Not sure about the smaller cities, but Istanbul has a large and great CS community.
Hitchhiking I wouldn't advice for safety reasons.

Hitchhiking in Turkey? No problem at all!
Last year, I did it a couple of times in East-Turkey, and the people are so friendly and hospitable you don't have to wait a long time before somebody picks you up.

Thanks Yvekes,

i hear communication is a bit tricky, as not many people speak english ... what about that?

About the communication, it's true. I only met a couple of people who were able to produce some words to form a sentence...
On the other hand, I also met men who spoke German and even Dutch, these were former immigrants...
